Delightful Methi Matar Malai: A Creamy Indian Cuisine Classic

Methi Matar Malai is a luxurious and flavorful dish that hails from the rich culinary heritage of North India. Ingredients:

1 cup fresh fenugreek leaves (methi), washed and chopped

1 cup green peas (matar), fresh or frozen

1 large onion, finely chopped

2 tomatoes, finely chopped

1-inch piece of ginger, grated

3-4 cloves of garlic, minced

1/2 cup fresh cream

1/4 cup cashew nuts, soaked in warm water

1 teaspoon cumin seeds

1 teaspoon garam masala

1/2 teaspoon turmeric powder

1/2 teaspoon red chili powder

1/2 teaspoon coriander powder

Salt to taste

2 tablespoons ghee or butter

Fresh cilantro leaves for garnish

Instructions:

Heat ghee or butter in a pan over medium heat. Add cumin seeds and let them splutter.

Add finely chopped onions and sauté until they turn golden brown.

Add minced garlic and grated ginger, and sauté for a couple of minutes until the raw smell disappears.

Add finely chopped tomatoes and cook until they turn soft and mushy.

Meanwhile, drain the soaked cashew nuts and grind them into a smooth paste using a blender or food processor.

Add the cashew paste to the pan and mix well with the onion-tomato mixture.

Stir in turmeric powder, red chili powder, coriander powder, and salt. Cook the masala mixture for a few minutes until the oil starts to separate from the sides.

Add chopped fenugreek leaves (methi) and green peas (matar) to the pan. Mix well to coat the vegetables with the masala.

Pour in fresh cream and garam masala. Stir gently to combine all the ingredients.

Cover the pan and let the Methi Matar Malai simmer on low heat for about 8-10 minutes, allowing the flavors to meld together and the vegetables to cook through.

Once the curry reaches the desired consistency and the vegetables are tender, remove it from heat.

Garnish with fresh cilantro leaves and serve hot with roti, naan, or rice.
