Savor the Delightful Fusion of Flavors with Palak Corn: A Nutritious and Flavorful Recipe

Palak Corn, a delightful fusion of spinach (palak) and sweet corn kernels, is a nutritious and flavorful dish that captivates the senses with its vibrant colors and aromatic spices. This wholesome recipe combines the goodness of leafy greens with the sweetness of corn, resulting in a dish that is not only visually appealing but also rich in essential nutrients. Ingredients:

2 cups fresh spinach leaves (palak), washed and chopped

1 cup sweet corn kernels, fresh or frozen

1 onion, finely chopped

2 tomatoes, finely chopped

2 green chilies, chopped (adjust according to spice preference)

1-inch piece of ginger, grated

3-4 cloves of garlic, minced

1 teaspoon cumin seeds

1 teaspoon turmeric powder

1 teaspoon coriander powder

1/2 teaspoon red chili powder

1/2 teaspoon garam masala

Salt to taste

2 tablespoons cooking oil or ghee

Fresh cilantro leaves for garnish

Instructions:

Heat cooking oil or ghee in a pan over medium heat. Add cumin seeds and let them splutter.

Add finely chopped onions and sauté until they turn golden brown.

Add minced garlic, grated ginger, and chopped green chilies. Sauté for a couple of minutes until the raw aroma disappears.

Add finely chopped tomatoes and cook until they turn soft and mushy, forming a thick masala paste.

Stir in turmeric powder, coriander powder, red chili powder, garam masala, and salt. Cook the masala mixture for a few minutes until the spices are well combined and fragrant.

Add chopped spinach (palak) to the pan and mix well with the masala. Cook for 2-3 minutes until the spinach wilts and reduces in volume.

Add sweet corn kernels to the pan and stir to combine with the spinach and masala mixture. Cook for an additional 3-4 minutes until the corn is heated through.

Adjust seasoning according to taste preferences and cook for a few more minutes until the flavors meld together.

Once cooked, remove the Palak Corn from heat and transfer it to a serving dish.

Garnish with fresh cilantro leaves and serve hot with roti, naan, or rice.
