Assorted vegetables (such as carrots, peas, potatoes, cauliflower, bell peppers) – 2 cups, chopped

1 large onion, thinly sliced

1 tomato, chopped

4 cloves garlic, minced

1-inch ginger, grated

2 green chilies, slit lengthwise

Whole spices (cinnamon stick, cloves, cardamom pods, bay leaves)

1/2 cup yogurt

Fresh cilantro leaves, chopped

Fresh mint leaves, chopped

Ghee or oil

Salt to taste

Biryani masala or garam masala

Saffron strands (optional)

Instructions:

  • Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain and set aside.
  • Heat ghee or oil in a large skillet or pressure cooker. Add the whole spices and sauté until fragrant.
  • Add the sliced onions and cook until golden brown. Then, add the minced garlic, grated ginger, and slit green chilies, and sauté for another minute.
  • Add the chopped vegetables and tomatoes to the skillet, along with biryani masala or garam masala, salt, and yogurt. Mix well to combine.
  • Add the soaked and drained basmati rice to the skillet and gently mix with the vegetable mixture. Add enough water to cover the rice by about an inch.
  • If using a pressure cooker, cover with the lid and cook on medium heat for one whistle. If using a skillet, cover with a tight-fitting lid and cook over low heat until the rice is cooked and the vegetables are tender.
  • Once the biryani is cooked, let it rest for a few minutes before fluffing it gently with a fork.
  • Garnish the veg biryani with chopped cilantro, mint leaves, fried onions, and saffron strands for an extra layer of flavor and aroma.
